Thinking Spring

Thinking Spring.............


What a difference a day makes! If you live in the south and do not like the weather on a particular day...............just wait to see what the morrow brings!! Saturday we awoke to snow flurries, gusty winds, and temperatures that did not climb above 36 degrees all day. Today, Sunday, we awoke to the change for Daylight Saving Time, sunshine, and temperatures in the mid 50s. Like I said, "What a difference a day makes!"


I am definitely ready for the spring season. My husband and I have begun the spring planting in the vegetable garden with cabbage, lettuce, and sweet English peas. Even the weather changes has not kept the vegetables from beginning their emergence from the dark depths of the winter soil. So far, all three veggies are sprouting and showing signs of growth. YEAH!!!!!! We enjoy gardening, harvesting, and preserving the fruits of our labors.........and the health benefits are great for us and our family as well. This is our first try at growing the English peas, so I do hope we are successful.


Soon we will be planting the remainder of the vegetables........green beans, corn, squash, tomatoes, potatoes, peppers, okra, and perhaps onions. We are usually pretty successful with our gardening and harvest enough for meals during the summer as well as preserving enough to feed us through the winter months. This past harvest was so successful that we shared our bountiful harvest with friends and neighbors. WOW!!!! What fun the gardening experience is.


Some of my favorite memories are gardening as a child, walking barefoot through the warm Georgia soil, and having green thumbs, literally, from harvesting and shelling green beans and other vegetables.


Hurry up spring! I can hardly wait for the sights, smells, and tastes of gardening in the south!
